How we eat...

I think it is only fair to give a little information about the way that dinner time goes down at the Flickinger household.

To start with - both Flick and I are usually fairly active individuals and put away a pretty substantial amount of food.  To that end, meals that could feed a family of 4 may end up only feeding the 2 of us for a night (we may end up with 1 serving of leftovers)...most of the recipes on this site are designed to serve 4 so tailor appropriately for larger gatherings or if you don't want leftovers.  I'll be sure to note if something makes a substantial amount of food so you know what to expect.

We also have a salad with dinner (almost) every night.  So if you don't see a lot of veggies in the meal - don't you worry.  We are keeping scurvy at bay by means of a spinach, cucumber, carrot, tomato, and green/red pepper salad every night.  We just make one big salad at the beginning of the week and siphon off it after we finish our main dish.  We eat salad last, in case you were wondering.

Next: a lot of the dishes can be tailored to meet your specific dietary needs.  If you really want to give our chili or meatloaf a try but don't do the red meat thing - by all means, sub in some ground turkey or chicken and give it a go!  Not a big fan of fish?  Try adding some chicken instead...don't be afraid to experiment and let me know how it goes!

Also important to note: we are not fancy chefs in a super gourmet kitchen by any stretch of the imagination!  Usually we are cooking with a baby and Bernese mountain dog underfoot and our kitchen is straight out of the 70's (yes that appliance/counter top color is Harvest Gold, thanks for asking!):

So we are just 2 regular people without any formal culinary training (yet...a girl can dream) who like to eat good food (and drink good beer and wine).  Trust me, home cooked meals are well within reach!
